Chef Christian Schulz is a classically trained musician with a passion for food.

In May 2018, he and business partner Rebecca Nicholson orchestrated Menuette, a pop-up dinner series featuring multiple-course meals, that, like a minuet, people enjoy at a slow and steady pace.

“The whole idea behind this experiment was to see if I could apply a lot of the same techniques I use composing music, but with food instead,” Schulz says.

This May, the roving symphony of flavor is getting a brick-and-mortar location in Brookline.

Located at 600 Brookline Blvd. in the former Parker’s cafe, the casual, counter-service restaurant will have seating for about 28 customers, including at a long communal table. Menuette’s menu will feature a selection of items Schulz and Nicholson have whipped up during their pop-up journey. (Parker’s, it should be noted, moved to 542 Brookline Blvd., and recently reopened as Red’s Good News.)

Schulz refers to the classic American cuisine as “finer diner food” and says fans can expect to see gourmet burgers, pies and other desserts such as the Colossal Buckeye, a shareable variation of the regional treat made with Nutella mousse, crushed Oreos and sea salt.

The BYOB eatery will boast a clean and simple décor that is warm and inviting. That’s how Schultz describes the South Hills.

When he moved to Brookline years ago, he was inspired by the way neighbors supported local businesses and each other. Schulz and Nicholson met in 2015 at Block 292 — now Fairlane — on Beverly Road in Mt. Lebanon and formed a culinary bond.

Menuette got its start at The Korner Pub in Mt. Lebanon, where its beer pairing dinners packed the place. The pop-up became a regular Saturday morning fixture at Hitchhiker Brewing Co.’s Mt. Lebanon location on Castle Shannon Boulevard.

They’re excited to welcome the community into their own space. In the meantime, Menuette is doing a few more pop-up performances, including brunch on March 7 at 802 Bean Company, just down the road at 802 Brookline Blvd.
